Monday Munchies: Breakfast Tacos Recipe

This week’s instalment of Monday Munchies is a taco recipe that you can enjoy for breakfast instead of lunch. If you’re a fan of breakfast burritos, we have just the recipe for you. Try this spin on a Mexican classic to start your morning the right way.

Ingredients

  • 1 large russet potato, peeled and diced into smaller pieces
  • kosher salt
  • 1 tbsp. of extra-virgin olive oil
  • 4 oz. of chorizo sausage, with casing removed
  • ¼ cup of diced yellow onion
  • ground black pepper
  • 2 tbsp. of butter
  • 3 large eggs, beaten
  • 4 medium flour tortillas
  • ½ cup of shredded cheddar
  • hot sauce for serving
  • 2 green onion stems, thinly sliced for serving
  • sliced avocado for serving (optional)
  • pickled onions for serving (optional)

Directions

  1. Place potatoes in a large pot and cover with 1 inch of cold water. Season the water with 1 teaspoon of kosher salt and let it boil. Simmer the potatoes until they are tender for about 3 to 5 minutes and then drain the water.
  2. Warm the olive oil in a large skillet on medium heat. Add chopped chorizo sausage and sliced onion to the skillet. Stir the mixture occasionally and simmer for 6 to 8 minutes, making sure the chorizo is cooked thoroughly and the onions are translucent.
  3. Move the chorizo and onions to the edges of your skillet, and if the skillet looks dry, add another tablespoon of olive oil. Add the drained potatoes to the centre of the skillet and spread them out in an even layer. Cook the undersides of the potatoes until they are brown and crispy for about 4 to 6 minutes. Stir the potatoes with the chorizo and turn off the heat.
  4. In a medium nonstick skillet, melt the butter. Pour slightly beaten eggs into the pan and let it set slightly, then reduce the heat from medium to low. Stir the eggs with a spatula or wooden spoon to create small curds. When the eggs are cooked to your liking, season with salt and pepper and then remove them from the skillet.
  5. Lightly toast each of your tortillas in a large dry skillet, then transfer to serving plates. Spread even amounts of cheddar, chorizo, potatoes, and eggs onto the tortillas. Serve with your choice of garnishes along with some hot sauce for added flavour.
